Coláche

Coláche is one of my favorite dishes growing up. So simple yet so delicious. Now that I think about it this dish was a very economical dish to make. A few dollars at most and mom would feed herself and her four daughters.

Coláche is a simple vegetarian dish. Pick your choice of zucchini or squash, a tomato, onion (I added onion but mom's recipe didn't include it because she hates cooked onion) and cotija cheese.

4 - small zucchini / squash or to taste, chopped into small cubes
1 - medium tomato, chopped
1/4 - medium white onion or to taste, chopped
5 oz of cotija cheese cubed
1 tbs of oil
Salt and pepper to taste

Heat oil over medium heat then add zucchini, tomato, onion, salt & pepper. Cover and steam cook until zucchini is done. About 6-7 minutes. Turn off heat, uncover and add the cotija cheese and cover again. Let stand for 5 minutes. Perfect time to heat your tortillas and set the table. Serve with jalapeños or a spicy salsa on the side.
