I Love Breakfast!

I just wanted to share a picture of my breakfast from yesterday. It was a simple veggie egg scramble with a touch of serrano chile for a kick. The scramble was on top of a flat sandwich bread slice that was nicely toasted. I then sprinkled cheese to finish it off. YUMMY! :) xoxo…

The "After Spinning Class" Dinner

I had an amazing spinning class today and by the time I got home I had a HUGE burst of energy! So I directed that energy to cooking.

First I put together a simple salad which had greens, tomatoes, lemon juice (my dressing), and salt & pepper. Simple & yummy. Then I made a shrimp dish which had minced garlic, salt/pepper, chopped Serrano pepper, chopped mushrooms, tomatoes, onion, spinach, and shrimp. Lastly, I cooked brown basmati rice. This was yummy with just the right amount of spicy.

I have plenty for lunch tomorrow. Hurray! Xoxo…

Ceviche

I finally did it! I learned many things throughout the process but overall I am so glad I finally made ceviche. The first thing I learned was that cutting fish isn't that easy. Make sure your knives are sharp! Second, I hate cutting cilantro. Can't they sell it without the stems?Third, now I know why limes are preferred instead of lemons. Lemons are sweeter and the tartness of limes work better for this dish. Lastly, don't chop cucumber in the food processor because it makes it a watery mush. :)

Aguachile Salsa

I bought a ton of jalapeƱos for a great price and that same week a customer brought in a bunch of lemons. So I decided to make the aguachile salsa for the first time. The jalapeƱos weren't too spicy but you can still taste the chile. I'm looking forward to tasting the salsa with shrimp. I still have a lot of lemon juice left so I'm thinking of making a yummy lemonade. This will all have to wait for Sunday. Can't wait!!

Veggie & Cheese Egg Scramble

This was fun because i was creative in my cooking. I grabbed veggies from my veggie drawer (squash, mushrooms, tomato, & jalapeño) and a little garlic. Added salt, pepper, and finally a slice of provolone cheese to top it off.

Veggie Stir Fry

Last night I decided to get creative and cook a meal without a recipe. Luckily I recently went grocery shopping and had plenty of ingredients to work with in my fridge.

The veggies I added were: broccoli, mushrooms, snow peas, tomatoes, zucchini, & carrots. Later I also added pieces of a Tofurkey Veggie Sausage. Once everything was cooked I added the stir-fry sauce.
