Veggie Stir Fry

Last night I decided to get creative and cook a meal without a recipe. Luckily I recently went grocery shopping and had plenty of ingredients to work with in my fridge.

The veggies I added were: broccoli, mushrooms, snow peas, tomatoes, zucchini, & carrots. Later I also added pieces of a Tofurkey Veggie Sausage. Once everything was cooked I added the stir-fry sauce.

Finished! Lentil Soup with Canadian Bacon

I like my soup! I initially tried to cut the salt significantly but once I tasted the broth 30 minutes before it was done I decided I needed to add salt. I didn't add regular salt but instead added Knorr chicken powder. Next time I want to add potatoes but overall I love the soup. The Canadian Bacon is awesome! :)

Slow Cooker Lentil Soup

I've wanted to make this soup for the past month and I finally found the time and perfect weather to make it. It rained yesterday and so today it's cold and very windy but with clear blue sunny skies.

The soup should be done in time for dinner and I can't wait! I really enjoyed the process of buying the ingredients and putting it together. Overall it was very easy but I was still able to tweak it with my own changes.

Potato & Onion Frittata

Yumsters!  I rocked this frittata!  I was home & hungry for a yummy breakfast. I was too lazy to get ready & go buy something. I also really didn't want to spend the money. 

I looked for a recipe that included eggs & potatoes (ingredients that I had & was craving) and found this one. I was afraid to attempt it at first because it would involve a step I've never used before (broiling) and I would have to change one of the ingredients from fresh parsely to frozen basil cubes. 

I did it anyway & it worked!  So yummy!  I have a few more ideas for this recipe & I'm excited for my next attempt.

Work

Work is going pretty well right now. I am being recommended for  committees, councils, and projects. Through all of this involvement I am meeting tons of senior managers that hopefully will one day make a hiring decision in my favor.  I'm very excited & I almost am afraid to say it out loud just in case it doesn't happen. 

My friend "Dy" told me last night that I need to change my attitude / outlook from "hopefully it will happen" to "It will happen". She's so right because I do believe in the law of attraction. You attract what you put out there.

Anyhow, I just wanted to record this moment with you.  I will keep you updated. :-)
