I bought a ton of jalapeƱos for a great price and that same week a customer brought in a bunch of lemons. So I decided to make the aguachile salsa for the first time. The jalapeƱos weren't too spicy but you can still taste the chile. I'm looking forward to tasting the salsa with shrimp. I still have a lot of lemon juice left so I'm thinking of making a yummy lemonade. This will all have to wait for Sunday. Can't wait!!

Veggie & Cheese Egg Scramble
This was fun because i was creative in my cooking. I grabbed veggies from my veggie drawer (squash, mushrooms, tomato, & jalapeño) and a little garlic. Added salt, pepper, and finally a slice of provolone cheese to top it off.

Veggie Stir Fry
Last night I decided to get creative and cook a meal without a recipe. Luckily I recently went grocery shopping and had plenty of ingredients to work with in my fridge.
The veggies I added were: broccoli, mushrooms, snow peas, tomatoes, zucchini, & carrots. Later I also added pieces of a Tofurkey Veggie Sausage. Once everything was cooked I added the stir-fry sauce.

Finished! Lentil Soup with Canadian Bacon
I like my soup! I initially tried to cut the salt significantly but once I tasted the broth 30 minutes before it was done I decided I needed to add salt. I didn't add regular salt but instead added Knorr chicken powder. Next time I want to add potatoes but overall I love the soup. The Canadian Bacon is awesome! :)

Slow Cooker Lentil Soup
I've wanted to make this soup for the past month and I finally found the time and perfect weather to make it. It rained yesterday and so today it's cold and very windy but with clear blue sunny skies.
The soup should be done in time for dinner and I can't wait! I really enjoyed the process of buying the ingredients and putting it together. Overall it was very easy but I was still able to tweak it with my own changes.
